Recipes

In our house we strive to eat gluten-free (GF), dairy-free (DF) and soy-free (SF) in order to accomodate both my own and the boy's food allergies and intolerances.

The severity of my sensitivity makes it likely that I have Celiacs disease, however it is unlikely that this will ever be confirmed.  I was not tested for Celiacs by my doctor prior to starting a gluten-free diet, and testing once gluten-free is virtually ineffective.  It seems unreasonable to me, to torture myself and my body, by ingesting gluten (likely for months) just to have it confirmed that I shouldn't eat it.  So when people ask me if I have Celiac's I can never definitively say yes, that being said, I am much more sensitive than many of the individuals diagnosed with Celiacs I that know.

The boy is on a dairy-free, soy-free diet in order to control his eczema (which I also suffer from), and his tolerance to gluten is still uncertain.  Here are some of the recipes that we are able to enjoy in our home.
